Veteris comes only in limited editions. We conduct an extremely accurate selection of our wheels. Each year, very few (if any suitable) wheels are set apart for a long ageing process that lasts 15 years, and gives an extraordinary, aroma to the cheese.
Inspired by aged wine, 20 years ago my father started experimenting longer ageing for our Parmigiano Reggiano. During long years of attempts and failures, I noticed that, some of our wheels grew an extraordinary aroma, deep, intense but always balanced. I then decided to put aside some of these fantastic wheels, starting a small reserve, with the dream that one day I could create the best possible extra old Parmigiano Reggiano. Veteris is my dream becoming real.
